What You Need:

  • 2 parathas (homemade or store-bought)
  • 1 cup Chatpate Punjabi Tadka (crunchy spicy potato & chickpea noodles)
  • 1 small onion (thinly sliced)
  • 1 small capsicum (thinly sliced)
  • ½ cup grated paneer or cooked mashed potatoes
  • 2 tbsp schezwan chutney or green chutney
  • 1 tbsp tomato ketchup
  • ½ tsp chaat masala
  • ½ tsp red chili powder (optional)
  • 1 tbsp lemon juice
  • 1 tbsp butter (for cooking)

How to Make the Magic Happen:

  1. Heat a tawa and cook the parathas with a little butter until golden brown on both sides.
  2. Spread a layer of schezwan chutney and tomato ketchup on the paratha.
  3. Add the grated paneer or mashed potatoes as the base.
  4. Toss in sliced onions and capsicum for that fresh, crunchy bite.
  5. Sprinkle chaat masala, red chili powder, and a squeeze of lemon juice.
  6. Now, the game-changer – add a generous handful of Punjabi Tadka for that ultimate crispy twist.
  7. Roll it up tightly, securing it with butter paper or foil.
  8. Toast lightly on the tawa for a crispy finish and dig in!

Swap out the paneer for scrambled eggs or spicy grilled chicken for an extra protein punch. Want it cheesier? Add some melted cheese before rolling it up!
